Butterscotch Chip Brownies


So it‘s almost the end of the semester and I trying to use up my baking products. I looked into my cabinet and I still have butterscotch chips and a brownie mix.  I believe these two products will work well together and I could even cut the brownies into shapes, but I don’t have any cookie cutters.

Ingredients

Brownie mix
2 Eggs
½ cup Vegetable oil
¼ cup Water
About 1 ¾ cup Butterscotch chips

Pre-heat oven to 350 degrees and grease pan.



Mix water, eggs, oil and brownie together until all dry ingredients are mixed in.  Make sure to start siring slowly so that the mix doesn't fly out of the bowl.









Add in butterscotch chips then pour into 9 by 9 pan.

Bake for 30- minutes

Take out and let cool then enjoy.

Brownie Swirled Cake



I wanted to make something with the left over cake mix from my last post on Funfetti Fudge.  I decided to swirl the cake mix with a brownie mix.  I like swirling things, whether it is different flavored cake or just different desserts.  


Ingredient

Brownie Mix
1/4 cup of water
2/3 cup vegetable oil
2 eggs

Cake mix minus 1 cup
1/2 cup of water
¼ cup vegetable oil
2 eggs
Powdered sugar

Pre-heat oven to 350 degrees and grease a 9 by 9 pan.

Mix brownie mix, water, oil and eggs together until all the dry ingredients are mixed in.

Pour into greased pan.












Mix cake mix, water, oil, and eggs until all the dry ingredients are mixed in.











Pour or scoop piled on to brownie mix making sure that you can still see the brownie in some spots

Take a plastic or butter knife and drag through batter in a swirling shape until you get the desired design.

Place in oven and cook for 30 to 40 minutes on middle rack.

Take out and let cool completely then dump out of pan. Be careful when you do this because the cake can crack and fall apart.





Sprinkle with powdered sugar and enjoy.













The cake is okay if the bottom gets messed up when you take it out of the pan no one will see that part.

Candy Brownies

I love playing around with brownies. I like adding stuff to the mix. One time my brother and I added caramel sauce, marshmallows, and almonds. Those tasted amazing.  I have also added candy. One night my friend and I were bored and wanted sweets. We had some mini candy bars and decided to add it to the mix. We didn’t add a lot so we had fun guessing if we would have candy in each bite. This time I decided to add my Dads favorite candy MM’s. 

Ingredients 

2 eggs
¼ cup water
2/3 cup vegetable/canola oil
Brownie mix
MM’s (2 packets)
Hand full of chocolate chips

Pre- heat oven to 350 degrees and spray pan. I’m using my 9 by 9 square Willton pan.

Mix together Brownie mix, 2 eggs, ¼ cup water, 2/3 cup oil, MM’s and chocolate chips in a medium size bowl until it’s well blended. I used MM’s because I had them lying around. The best part of these brownies is finding good stuff you already have and adding it in.  I really doesn’t matter how many chocolate chips you use; I just wanted more chocolate.






Ready to bake

Pour in to pan and cook for about 30 minutes. Check to make sure the brownies are cooked all the way through by putting a tooth pick in the brownie and pulling it out to see if the batter sticks. 

Take out and cool then cut in to squares and enjoy.

Valentine Cupcakes

I LOVE cup cakes. Junior year of high school I made cupcakes at least once a week.  I always made them from scratch. Since I have been in college I have found it easier to use a box. I don’t own a mixer and making cakes from scratch tends to end with more flour on me then in the batter. 

Valentine’s Day is coming up and I found an idea I wanted to try. You use a brownie and cake mix.  I will use a strawberry cake mix and a fudge brownie mix to make it fit the holiday. 

Ingredients:                                                                                        
Brownie mix
2 eggs
¼ cup water
2/3 cup vegetable/canola oil

Strawberry cake mix
3 eggs
1 cup water
1/3 cup vegetable/ canola oil

Pre-heat  oven to 350 and line cupcake pan with liners. Lately I have been spraying the liners with pam because it makes it easier to take the paper off and you get to eat more cake. You don’t have to do that but it does make prettier cupcakes.

Mix together Brownie mix 2 eggs, ¼ cup water, and 2/3 cup oil in a medium size bowl until it’s well blended.

Fill the cupcake pan with brownie batter until each cup is about a third full and set aside. Make sure you do not fill them up too much or they will not cook evenly.










Mix together cake mix, 3 eggs, 1 cup of water and 1/3 cup oil in a large bowl. Use a mixer if you have one on medium speed for about 2 minutes, if you don’t have one use a wooden spoon and stir at a speed close to medium on a mixer for about 2-3 minutes.

Grab the pan you set aside and fill with cake batter until the cups are 2/3s full.

Bake for about 20-25 minutes. If batter is too thick the top will brown darker then you want. Use a toothpick to check if cupcake is fully cooked and cool before icing. The icing will melt if the cupcakes are not fully cooled. Add sprinkles to make it more festive.

Mississippi Mud Brownies


This Blog is going to be a way for me to post about recipes. The recipes will either be old favorites or something I want to try. All the recipes will be something sweet and sugary.

Mississippi Mud Brownies
This is a new recipe I wanted to try. I used a box, but if I make it again I will do it on my own. I will provide directions for both. 

The Ingredients for the box mix: 3 tablespoons of water, 1 stick of butter, 1 egg, Mississippi mud mix

The Ingredients for non-box mix: 3 tablespoons of water, 1 stick of butter, 1 egg, I fudge brownie mix (ingredients might vary depending on the box mix) 1-1½ cups of crushed Oreos (enough to fill the bottom of pan), and 1 cup of marshmallows.

Preheat the oven to 325 and melt ½ stick of butter (in a medium size microwavable bowl and microwave for 1 minute at power 40) mix in cookie mix from box or crushed Oreos. Take out about 1-2 tablespoons of the mixture.  

Spread the remaining cookie and butter mix into an 8 or 9 inch square pan. (I used a 9 in. pan). Press the cookie mix into the bottom of the pan firmly.  

This crust was so good.

Melt the second half of the butter in a medium size bowl. Mix in brownie mix, water, eggs and marshmallows. Then poor in pan and spread on top of the cookie mix. I used my hands to spread the mixture. You can use a spatula, but that doesn’t work for me.

Make sure the browning mixture is even spread on top of the cookie mixture then sprinkle the 1-2 tablespoons on top. 

Bake for a about 15-20 minutes for a 9 in. pan or 30-35 for a 8 in. pan.

Let cool then enjoy.
