No Bake Cookies with a Twist

With Easter Break coming up I wanted  to make something easy and quick. Since it is not raining or cloudy, I decided to make No bake cookies. The trick to no bake cookies is to not make them when it’s rainy. They will not set correctly if the humidity levels are high. I wanted them to be a little different, so I decided to pretzels. This I'm hoping will add some salty flavor to go along with the sweet.

Measure-All® Cup
Ingredients

2 cups of sugar
4 tablespoons cocoa (I use dark)
1 stick of butter
½ cup milk
½ cup of peanut butter (I use crunchy)
1 teaspoon vanilla
2 ½ cups of oatmeal
1 cup of crushed pretzels (if you don’t want to use pretzels use 3 cups of oatmeal instead of 2 1/2 )

Measure all ingredients out first because it needs to be ready to go. If you don’t get the ingredients in fast enough it will not set correctly.

In a sauce pan or pot mix sugar, cocoa, butter, and milk together. Let it boil for a minute then take of heat and immediately add peanut butter, vanilla, oatmeal, and pretzels





and stir some more

 
Mix together until all the oatmeal and pretzels are covered.

Take spoon and drop onto wax paper.

Lets cool and harden then enjoy.

Chocolate Peanut Butter Cookie Bars






I went home this weekend and I was trying to decide what I wanted to bake something that I didn’t need a lot of ingredients. My mom had the ingredients for cookie bars and I decided to make them. They are perfect for any chocolate and peanut butter lovers.

Ingredients

Chocolate chip cookie mix (Betty Crocker)
Peanut butter cookie mix (Betty Crocker)
1 stick of butter
3 eggs
3 tablespoons of vegetable/ canola oil
2 tablespoons of water
 11.5 oz bag of chocolate chunks

Pre-heat oven to 375 degrees

In a medium bowl mix the chocolate chip cookie mix, butter and 1 egg until all mix in blended in.

Spread dough in a 13 by 9 casserole dish and lay aside.











Get the medium bowl back out and mix the peanut butter cookie mix, 2 eggs, oil, and water. I used the same bowl because it did not matter if the doughs mixed and I don’t like washing more dishes then I have to.




Spread peanut butter dough on top of chocolate chip dough and sprinkle with chocolate chunks. Make sure the top if covered. I didn’t use the whole bag but it wouldn’t have hurt if I did.








Put into the oven on the middle rack and bake for about 20 minutes.

Let cool then cut into rectangles and enjoy.

Candy Brownies

I love playing around with brownies. I like adding stuff to the mix. One time my brother and I added caramel sauce, marshmallows, and almonds. Those tasted amazing.  I have also added candy. One night my friend and I were bored and wanted sweets. We had some mini candy bars and decided to add it to the mix. We didn’t add a lot so we had fun guessing if we would have candy in each bite. This time I decided to add my Dads favorite candy MM’s. 

Ingredients 

2 eggs
¼ cup water
2/3 cup vegetable/canola oil
Brownie mix
MM’s (2 packets)
Hand full of chocolate chips

Pre- heat oven to 350 degrees and spray pan. I’m using my 9 by 9 square Willton pan.

Mix together Brownie mix, 2 eggs, ¼ cup water, 2/3 cup oil, MM’s and chocolate chips in a medium size bowl until it’s well blended. I used MM’s because I had them lying around. The best part of these brownies is finding good stuff you already have and adding it in.  I really doesn’t matter how many chocolate chips you use; I just wanted more chocolate.






Ready to bake

Pour in to pan and cook for about 30 minutes. Check to make sure the brownies are cooked all the way through by putting a tooth pick in the brownie and pulling it out to see if the batter sticks. 

Take out and cool then cut in to squares and enjoy.

St. Patrick"s Day Rice Crispy Treats



For St. Patties Day I wanted to make rice crispy clovers, but I need more practice making shapes with rice crispy treats.  Yesterday my friends and I had a movie night and I made green rice crispy treats. 

Ingredients 

6 cups of rice crispy cereal
4 cups of mini marshmallows (I used the whole bag)
3 tablespoons of butter
Green food coloring
Sprinkles (optional) 

Get out a sauce pan or pot and melt butter over medium-low heat. 

Once butter is melted add marshmallows and turn heat to medium. Stir constantly until marshmallows are melted.

Add about 10 drops of green food coloring. If you are using neon food dye add 2-3 drops of blue. 

Add the 6 cups of rice crispy cereal. If you add a few cups at a time it makes it easier to stir. 

Once all the cereal is coated in marshmallow you can add sprinkles. I added spring sprinkles. Make sure you have plenty of the sprinkles you plan to use; I ended up using more than half of the container.








Pour into a 13 by 9 casserole dish and let cool.

Then cut into squares and enjoy.

Store in an air tight container or they will dry out.

Caramel Apple Cobbler

Hey, I’m Brittany’s brother and she asked me to do a guest blog since I like to cook and go camping. So today I am going to make an apple caramel cobbler in a cast iron dutch oven.

Ingredients                                                                                                                                         
Batter
1 cup self rising flour
1cup sugar
¼ cup brown sugar
¾ cup milk

Filling
5 apples
caramel syrup
1 stick of butter

Equipment
12 quart cast iron dutch oven
charcoal
claw hammer

Instructions

1. Pour 24 charcoal briquettes into a charcoal chimney or in a pyramid shape on a piece of aluminum foil. Then light them. (24 charcoal briquettes is the minimum number required. If it is cold outside use a little more)

2. Mix together flour, regular sugar, and milk

3. Peel apples and slice them anyway you want. (You can use apple pie filling if you want)

4. Put sliced apples in a container and cover them in caramel















5. Line the dutch oven with aluminum foil and then put the stick of butter in it.

6. When the charcoal is done (it will be gray and red not black), place 8 briquettes in a circle on a piece of aluminum foil.


7. Put the dutch oven on the 8 briquettes and then put 16 briquettes around the outside edge of the dutch oven. (If it’s below 40 degrees outside put more on top but not on bottom)

8. When the butter is melted, open the lid with the hammer and add the apples, then the batter, then sprinkle the brown sugar on top. Then replace the lid.







9. It will take about an hour for it to bake. Rotate the base clockwise 45 degrees and the base counter clockwise 45 degrees every fifteen minutes so that it bakes consistently.

10. When the top is golden brown it is done. Let cool then serve.
