How to Make Ice Cream Sandwiches


This week I wanted to make something easy because I am kind on a sugar overload form last week. It’s also really nice outside so I would rather spend my day out of the kitchen.  I decided to would show you how to make ice cream sandwiches.

I decided to buy cookies from the bakery because I wanted this to be quick and easy but you can also use my Dark Chocolate Peanut Butter cookies or Cookies my Way.  Just make sure all the cookies are the same size.





All you need are cookies and your favorite ice cream. I decided to use mini chocolate chip cookies and mint chocolate chip ice cream.






The ice cream works better the colder it is. I started using it as soon as I bought it and it was a little melted.

Get out a plate or the container you will store the cookies in and lay out a few cookies bottoms up.

Then take a spoon full of ice cream and spread it onto one cookie.  I only did this to one side but I think it would be better if I did this to both sides.  For lager cookies you are going to need more than a spoon full. 
Make sure the ice cream is about an inch to two inches thick.

Once the ice cream is on the cookie top it with another cookie and place back on the plate. Both cookies in the sandwich should have ice cream on them before be put together.




Once all the sandwiches are together put the plate in a baggy or close the container and put in the freezer to chill. This will help the cookies stick together.




I let them freeze for about 5 hours, but 30 minutes to an hour should be fine.

Take out and enjoy especially on a hot day.

Chocolate Peanut Butter Cookie Bars






I went home this weekend and I was trying to decide what I wanted to bake something that I didn’t need a lot of ingredients. My mom had the ingredients for cookie bars and I decided to make them. They are perfect for any chocolate and peanut butter lovers.

Ingredients

Chocolate chip cookie mix (Betty Crocker)
Peanut butter cookie mix (Betty Crocker)
1 stick of butter
3 eggs
3 tablespoons of vegetable/ canola oil
2 tablespoons of water
 11.5 oz bag of chocolate chunks

Pre-heat oven to 375 degrees

In a medium bowl mix the chocolate chip cookie mix, butter and 1 egg until all mix in blended in.

Spread dough in a 13 by 9 casserole dish and lay aside.











Get the medium bowl back out and mix the peanut butter cookie mix, 2 eggs, oil, and water. I used the same bowl because it did not matter if the doughs mixed and I don’t like washing more dishes then I have to.




Spread peanut butter dough on top of chocolate chip dough and sprinkle with chocolate chunks. Make sure the top if covered. I didn’t use the whole bag but it wouldn’t have hurt if I did.








Put into the oven on the middle rack and bake for about 20 minutes.

Let cool then cut into rectangles and enjoy.

Cookies my Way

I wanted to make something easy his weekend.  So I decided to make cookies, but I wanted to have a lot of fun with it. I decided to make what I call Cookies My Way. I get the store bought break and bake sugar cookies and bags of chocolate chips, reese's chips, butterscotch chips and whatever else I think will be good in a cookie.

This is something you can do with friends are kids. I have done it with both.  Everyone gets to make the cookies they like.  This time I made it with my best friend and her sister.

What you will need.
Break and bake sugar cookies
Food coloring
Assortment of baking chips (this time I used chocolate, reese's and butterscotch)
Any other candy (mm's, snickers, ect.)
Sprinkles
Powdered sugar
Milk

Preheat the oven to 325.

Break off a piece of cookie dough and roll into a ball. 

I had so much fun





If you want to dye it add one drop or less if possible and mix in. your hands will get messy. I tried doing this in a baggy and it did not work. The dye will come of your hands in about a day with soap and water. Finger nail polish should help get it off quicker.  









 Then if you want add chips, about 8 chips is good for each cookie. Make it fun and add multiple types to the same cookie.

Add to the cookie sheet and bake for about 13-15 minute a little longer if you want crispy cookies. 





 Once they come out of the oven let them cool on sheet then on a rack 

Make a glaze icing by starting with about 2 tablespoons of powdered sugar and ½ a teaspoon of milk in a sandwich bag. I have to adjust this all the time and don’t normally measure just make sure the glaze isn’t soupy and add more powdered sugar to make it thicker or milk to make it thinner.  You can also dye the icing I would start with one or two drops.  Close the bag and make sure to get most of the air out then mix it together then cut a corner off and drizzle over cookies. I only added the icing to the cookies that were plain.

 After icing add sprinkles then enjoy. They go fast.
